Mine where MS01 two peice, BBS LM's are 3 peice aren't they? So you have to seal them on the faces between each 3 parts.
But they're just nuts and bolts so just fasten opposites.
M7 so torque to 25Nm

Bbs lm are 2 piece it’s only the centre which splits apart

Does anyone know what part of the rims need to be left not painted, if any?

The centre part of the wheels that faces on to the hub... Should this be masked off or have the powder coat sanded away?

The face of the outer rim and the rear face of the Centre plate where they meet each other? should this be bare?

The pockets that take the nuts on the outer face?
