recently my fuel pump has started being somewhat temperamental.

The is power to the white connector that plugs into the top of the tank. I think the issue lies with the blue connector that plugs into the underside of the tank cover.

Is there a go to way of dealing with this?

Yep, drop a match in there! 🤣
Sounds like you need to get ye olde multimeter oot

Is the wiring standard? Its common for a relay to be installed for the fuel pump. If it is standard, you could add a relay, and if not, then you can take it to stock wiring and see if it resolves the issue.

In either case, check the resistance to ground, and the total voltage being supplied.

Appears to be stock wiring

Voltage is go to the white plug that fits into the connector on top of the fuel tank, it appears to be a problem from the underside of that connector.

I am thinking of replacing the connector with some form of bulkhead fitting but struggling to find the right thing

Seems like a good move to me to replace the connector, must be a couple of quid somewhere? I cant help with what connector it is though, not sure on that one. Get a proper crimp tool and fingers crossed the issue is fixed for you.

Struggling to find a replacement connector.

Only thing i can find it a complete replacement fuel pump hanger assembly which seems a bit excessive for a poxy plastic connector

You should be able to find the connector on the wiring diagram!
A lazy way would just to say.... @Ceylon what connector does this man need 😆
